French toast is one of my favorite breakfasts, but it's not always the most nutrient packed option. Typically made from white bread dipped in egg & creme custard and topped with maple syrup, butter and powdered sugar, french toast feels more like dessert. There's nothing wrong in indulging in this option, but most days I like a little more protein & fiber and a little less sugar for my first meal of the day.
Whole grains from ezekiel cinnamon raisin bread (any whole grain toast will work) and a protein boost from Vital Proteins Collagen Peptides add a boost to this breakfast favorite.
Protein Packed French Toast
Serves 1
2 slices Ezekiel Cinnamon Raisin Bread
1 egg
1-2 tbsp unsweetened almond milk
1 scoop Vital Proteins Collagen Peptides or 1 scoop protein powder of choice
1/4 tsp vanilla extract
1/2 tsp cinnamon
Toppings
1 tbsp maple syrup
2 tbsp cashew butter
1/4 cup blueberries
Instructions
1. Whisk together egg, almond milk, collagen peptides, vanilla and cinnamon in a large shallow bowl or baking dish.
2. Heat a large skillet or griddle over medium heat. Grease with cooking spray, ghee or coconut oil.
2. Dip bread slices in egg mixture, poking holes in the bread with a fork and coating both sides. Transfer to skillet or griddle and cook 2-4 minutes per side until golden brown and crispy.
3. Transfer to plate and top with cashew butter, maple syrup and blueberries or as desired.
