Apple Cider Donuts

Fall is almost here, and if you love apples as much as I do you're going to flip over these donuts. Every year we drive to Apple Hill, pick fresh apples, eat hot apple cider donuts and drink way too much fresh pressed cider. I look forward to it every year! Since we won't be able to go for a few more weeks, I knew I had to recreate these donuts at home.


These 20 minute one bowl wonders are baked, vegan and gluten free, packed with fiber and sweetened mostly with fruit. Did I mention they're delicious?!



Baked Apple Cider Donuts

Ingredients

2 tbsp ground flax

6 tbsp apple cider

1/2 cup applesauce

2 tablespoons coconut oil, melted

1/2 tsp vanilla extract

1 teaspoon pumpkin pie spice

1 tsp cinnamon

1 teaspoon baking powder 

1/2 teaspoon baking soda

1/4 cup coconut sugar

1/4 cup rolled oats (gf)

1/4 cup crushed Bare Snacks Fuji & Reds apple chips (optional)


Optional Topping

1 cup powdered sugar + 1/4-1/3 cup apple cider or water

crushed apple chips, cinnamon and sugar


Instructions

Preheat oven to 350 degrees F Combine flax seed, apple sauce, cider, coconut oil and vanilla in a large mixing bowl. Add spices, baking powder, baking soda, sugar and flour to flax mixture. Mix well. Fold in oats & crushed apple chips if using. Divide between donut pan or muffin tin. Bake for 12-18 minutes or until toothpick inserted in center comes out clean. Let cool in pan 5-10 minutes. Transfer to cooling rack. Glaze Instructions: Whisk together powdered sugar and 1/2 the cider or water in a small bowl, you want it pretty thick, add more water if needed. Dip or drizzle donuts with glaze and top with additional crushed apple chips, cinnamon and or sugar if desired.


*I've also tested these with good old fashioned all purpose flour, so don't fret if you can't get your hands on the Bob's Red Mill Paleo Flour. I imagine most gluten free flour mixes or oat flour would work wonders as well. If you try with a different flour let me know how they turn out!
