I will make just about anything into nachos or tacos and I'm not the least bit sorry about it. I used all Trader Joe's products for this recipe but don't fret if you don't have a TJ's near you, scroll to the bottom for tips.
The base: whole wheat mediterranean flat bread cut into wedges & toasted
The veggies: leftover cooked zucchini & cole slaw mix (both are optional)
The meat: chicken shawarma thighs, cooked according to package directions.
The cheese: feta cheese, crumbled
The sauce: tzatziki dip
The garnish: fresh parsley
Recipe:
1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Cut flat bread into wedges and arrange on baking sheet. Bake for 10-15 minutes, flipping halfway through.
2. While pita cooks, cook chicken in pan, grill or throw on a sheet pan and bake it, until it reaches a temp of 165 degrees.
3. When chicken has finished cooking, place on a cutting board and let rest for 2-3 minutes. Chop into bite sized pieces. layer chicken on top of cooked flat bread. Crumble feta cheese on top and place in oven for 8-10 minutes to melt cheese. Remove from oven.
4. Top with coleslaw mix, drizzle with tzatziki sauce and garnish with fresh parsley.
Notes:
You can use pita, pita chips, or tortilla chips for the base.
Chicken Shawarma Marinade:
olive oil, 1/4 cup
lemon, juice of 1/2
garlic cloves, 2
salt, 1 tsp
cumin, 1/2 tsp
coriander, 1/2 tsp
black pepper
turmeric, 1/4 tsp
cinnamon, 1/4 tsp
cayenne, 1/4 tsp
chicken thighs, boneless skinless, 1 lb
combine olive oil and spices in a large ziplock bag or baking dish. Add chicken and toss to combine and/or massage spice mixture into chicken. Marinate 2 hours or more and cook as desired to 165degrees F.
Lamb, beef or even crumbled tofu would also work well here I imagine. Have you tried chicken shawarma before? It's great on its own, just don't skip the tzatziki!
