Crispy bacon. Gooey, melted cheddar. Fluffy waffles. When you think of waffles you probably think of maple syrup, chocolate chips or strawberry waffles. But trust me when I say savory waffles are a game changer! Brunch dreams do come true and these bacon cheddar waffles are sure to be on repeat.
To make these super simple I used Birch Benders Paleo Waffle Mix, I love that all you need to add is water! I'm sure any waffle mix will do, but you'll need to prepare the batter as directed on the package.
Bacon Cheddar Waffles
serves 4
2 cups Birch Benders Paleo Waffle mix
2 cups water
2 tbsp olive oil
1/2 cup shredded cheddar cheese
4 slices cooked bacon, chopped
4 green onions, finely chopped green parts only
cooking spray
OPTIONAL TOPPINGS fried eggs

hot sauce
Preheat waffle iron on medium-low heat. Preheat oven to 200 degrees F. Place cookie sheet in oven. In a large bowl combine waffle mix, water and oil, stir to combine and set aside. Chop bacon, onion and shred cheddar. Fold into waffle mix. Spray waffle iron with cooking spray. Add batter to hot waffle iron. Cook 3-7 minutes until golden brown and crispy. While waffles cook, prepare toppings. Transfer cooked waffles to oven to keep warm. Top as desired and enjoy!
